
For our first cooking adventure, I chose a Sweet and Sour Pork recipe, which I’ve decided to rename Pineapple Pork. When I first thought of this dish, I expected it to taste like the sweet and sour pork you’d find at a restaurant. However, I was in for a pleasant surprise!
My great-grandmother’s recipe called for cubed pork, which I switched to strips for easier eating. The ingredients included a can of pineapple, some vinegar, brown sugar, soy sauce, onions, and green peppers. I served the dish over brown rice, which nicely absorbed some of the excess liquid.
I was surprised by how long the dish needed to simmer—an entire hour! But what surprised me even more was the subtlety of the flavor. Unlike many modern dishes that have bold and strong seasonings, this recipe had a gentle taste, with the pineapple taking center stage. Hence, the new name, Pineapple Pork. There was nothing sour about this dish!
Would I cook this dish again for my family? Absolutely. My 7-year-old, who is usually a very picky eater, loved it! And there were no complaints from my husband or our 12-year-old.
